It is difficult to plan backpacking meals that are both tasty and nutritious, and also light enough to carry. The addition of dehydrated yogurt to your meals can enhance their flavor and provide more calories. Some yogurts are better at dehydrating than others. Greek yogurts are ideal. Some fruit blended yogurts can also be turned into yogurt-fruit leather. It can be hard to dry fruit yogurts that are lumpy.

Materials and Supplies:

Yogurt (Six 170 gram (170 ounce) yogurts will yield a little more than 30 grams (30 ounces) of dry yogurt.

Dehydrator (there are many brands and styles, We has a good selection.

Fruit leather trays for dehydrator.

Large Bowl, Large Spoon

Coffee or spice mill

Plastic bags or other containers (about 20 x 20mm; 3 x 3 inches) that are small (about 20 x 20 millimeters)

Note: This process can be modified to use a low-temperature oven, cookie sheets and a blender.

Step 1: Spread Yogurt onto Fruit Leather Drying Tray

Spread 6-8 ounces of yogurt (180 – 225 g) on a tray with fruit leathers. The thickness should be between 1/8 and 1/4 inch (3 to 5 mm).

Step 2: Dehydrate

Place the trays into a dehydrator. If your dehydrator is temperature-controlled, set it to a low temperature (115-125 degrees F/46-52 degrees C) otherwise the yogurt may discolor. You can also put empty trays in between the loaded trays and the heat source.

The yogurt should be dried for several hours, until it is completely flaky.

Step 3: Remove the Dried Yogurt Tray

The flakes can make a mess as they are thin and easily blown away. The pieces will fall into the bowl if you hold the tray above a large bowl.

Step 4: Break Flakes into Smaller Pieces

When all of the yogurt has been poured into the bowl, use your hands to break the larger pieces so that they can fit in a grinder. The flakes will not rehydrate properly if they aren’t pulverized.

Step 5: Put the Flakes into a Grinder

You can grind the flakes in a coffee mill (if you enjoy coffee yogurt!) You can also use a spice mill or a coffee grinder (if you like coffee yogurt!

The powder will then be fine.

Step 6: Packaging the Powdered Yogurt

You can package individual servings in plastic bags, or any other container. The dried yogurt can be kept in the fridge or freezer if it is not going to be consumed within a couple of days.

Step 7: Enjoy!

Add the Frozen Yoghurt Powder to cereals or other dishes to add flavor and calories. Add about 2-3 ounces of water (60-90 ml) to 30 grams of powder and mix. Let it sit for 10-20 mins. The final product will not be as creamy as the original, but it will still be delicious.
